Things to Try Thursday -16/05/13

IMG_5190Hej. I just handed in my (hopefully last ever) individual piece of coursework. It ended up 30 pages long (double spaced and including references, but still) and was quite a pain. First I didn’t know what to write and then I ended up having to cut out 1500 words. Fun times. Now I’ve “only” got a piece of group coursework, a group presentation and three exams left and then I’m done with uni (19 days to go!). As last week, I didn’t have time to actively look for recipes, so here’s just a couple that I came across and thought  were worth sharing. Have you come across anything that you think you have to try out this week? If you have, please share it with me in the comments.

Things to Try Thursday – 09/05/13

Screen Shot 2013-05-09 at 8.58.26 AMFirst of all, sorry that I’ve been really slow with posting the recipes I promised to post, uni is kind of taking over everything at the moment (less than 4 weeks now though wohooo and oh my god I can’t believe it’s actually nearly over and I have to go join the real world).
I know there’s not too many recipes this week, but my deadlines next week really take priority at the moment, so I couldn’t spend time actively looking for recipes. I thought it’d be nice to quickly post the ones I just came across anyway. If you have anything that you think would be great to try, please leave me a link in the comments.
This week is more about what I would like people to make me to get me through my last couple of weeks of uni. Any volunteers please drop me an email ;)

Week 2 Veg Box Challenge – The Box

#VegBoxChallenge End of Week 1

This is what I made with all my beautiful veg:

♔ A delicious salad inspired by Jennifer from milk and honey. My version of the recipe is here, for this I used half of the broccoli from my box.

♔ A super tasty asparagus-broccoli quiche. Oh and it’s topped with marinated feta. Recipe here!

♔ Antipasti courgette roll-ups filled with cream cheese and sweetcorn, in a tomato sauce topped with marinated feta. Recipe here.

♔ Moonblush (Cherry) Tomatoes (recipe here). These were supposed to go into the salad, but since that changed, we had them in a halloumi wrap that was served with spicy rice (similar to the one at Nandos).

♔ Salad. I smothered it in an avocado-jalapeno dressing and had it with some green pepper in a wrap. Butterhead lettuce, my actually favourite kind of lettuce, used up (no photo, sorry)

♔ Roasted beetroot, carrot and red onions with cumin. This was surprisingly tasty, thank you for the idea Anthea! Unsurprisingly, I had it in a wrap (needed to use them up, I don’t actually live on wraps) with some greek yoghurt and marinated feta. NOM.

♔ Delightful fennel pasta. I have to say I was super surprised how tasty this was. The recipe is from here. I had it without basil, because my basil decided to be an absolute let-down and be mouldy after only two days (again, no photo sorry!)

So here’s my first blogpost reporting back what I did with all the lovely things I had in my veg box last week and how it went in general. Having made it into a challenge and blogging about it actually really helped me to force myself to use everything up. For example, whilst I had made a food plan for this week, I didn’t think the order through properly. One of our dinners should have been the butterhead lettuce with an avocado-jalapeno-buttermilk dressing, halloumi etc etc. BUT I was so focused on waiting to have it when the avocado had reached perfect ripeness, that I forgot that lettuce doesn’t last forever. So when I realised, that it already wasn’t looking its prettiest on Tuesday, I decided to just have it for lunch in a simpler version instead… I would have definitely thrown it away otherwise (I’m not proud of it, but it’s true), since I’m not a big fan of lettuce at the best of times, and quite picky with things that have gone past there best before date, if it wasn’t for knowing that I’d be annoyed to have to report back, that I threw 1 veg away.

And this post my friends I think shows that I actually made great use of everything. I’m actually very happy with how the first week went. As I said before I used up more than I probably would have otherwise, and I put in a lot more effort to make it interesting (to a big part thanks to people giving great tips), and I think it paid off. I can honestly say that I enjoyed every single one of those dishes. For everything that’s actually a recipe, I’ll post recipes on here next week (hopefully). Healthy Lunches

Yo! I blogged about lunches you can take to work here, but today it being the weekend and all, I thought I’d show you two quick dishes (I wouldn’t really call them recipes, because it’s more just putting a couple of things together) that you can have when you’re at home. They’re healthy, but also super tasty – I’m always very keen to make healthy food delicious, definitely not prepared to give up eating nice things at all!

First up, the simplest thing you can imagine:

Quinoa with Chargrilled Asparagus, Avocado and Tomato

2013-03-20 14.00.37♠ Make your quinoa. To do this, follow the package instructions (don’t forget to give it a good rinse), but instead of just cooking it in water, make it vegetable stock with a tiny bit of olive oil and honey or for an even healthier option agave syrup, it’ll make all the difference (I’ve used about 40g of uncooked quinoa)
♠ Wash and cut off the woody bits of one packet of asparagus.
♠ Heat a tiny bit of olive oil in a griddle pan, then chargrill your asparagus in it
♠ When it’s done, crush in one clove of garlic and the juice of 1 lemon and toss it around.
♠ Serve with the quinoa, the flesh of an avocado and some tomatoes (just you know to add colour and because they’re delicious)

This one is similar to something I saw on GemsMaquillage’s Instagram.
Couscous with caramelized onions, red peppers andmushrooms.
FotoBtw don’t be put off by the tofu, I never eat tofu apart from in this because I hate it, but this particular one is actually pretty nice.  

♠ Start by making some couscous. I’ve talked about how to make it perfect here. If you’re just making lunch for yourself, it’s sometimes difficult to measure (unless you’re weighing it of course). I found 2 egg cups full of couscous (uncooked) to be the perfect amount for lunch. So take 2 egg cups full of couscous, add a tiny little bit of honey and olive oil and cover in 3 egg cups full of boiling vegetable stock (you can also put the powder on the couscous and turn it into stock in the bowl, saves you hassle). Give it a little stir and cover the bowl with a plate. Set a timer for 10 minutes, which is when you loosen it up with a fork.

♠ Cut one red onion into thin slices and 1 red pepper into strips. Then heat a little olive oil in a small frying pan and start caramelizing your onions. To add flavour, it’s a good idea to add a little veg stock power or curry powder at this stage. Let it slightly catch before you add a splash of water. Repeat this until your onions are lovely and soft and caramelised.

♠ Add the red pepper strips and half a package of marinated Cauldron Tofu.

♠ Fry for a further 5 minutes, which should be about when your couscous is ready. Serve the Tofu and Veg on top of your couscous with a splodge of greek yoghurt (btw did you know that a lot of zero fat greek yoghurts are literally full of sugar? Now that I know, I opt for full fat greek yoghurt, because I rather have some fat from milk than lots of added sugar)

The Veg Box Challenge

Say hello to the vegetable box, she’s called Small Gourmet. As if by magic, she comes to my house every Friday and presents me with delicious, fresh, seasonal vegetables (8 different ones!). I like her, a lot.

Ok so here’s the deal. For my birthday, my lovely mum gave me a vegetable box subscription from Abel and Cole. There’s lots of different vegetable (and/or fruit) boxes to choose from and you can even add fresh milk, yoghurt, herbs, eggs, meat, fish etc etc to your order. I’ve gone for the small gourmet box: 8 types of seasonal veg with the more adventurous things included. Interesting huh? 
Each week you can check out online what vegetables will supposedly be in your box, and if there’s one, you just know, you won’t eat, you can put it on your dislike list and they will replace it with something else.
Obviously this comes at a cost, but the prices start at 9 Pound which isn’t too bad, if you consider that it’s brought to your doorstep and that you will get super fresh and delicious veggies! I also like it, because it gets you to try out new things, that you probably wouldn’t have picked up at the supermarket.

Anyway, I’ve just received my second box today and I thought I’d share the whole experience (I also think I’ll try even harder to really make use of everything, but we’ll see).

Here’s what I got this week:
– Avocado
– Beetroot Bunch
– Purple Carrots
– Red Pointed Cabbage
– Baby Spinach
– Chard
– Red Pepper
– Sweet Potatoes.

I’m currently trying to work out, what I can make each of the above ingredients. If you have any recipe that really brings out the best of any of those veggies, please do share : ).
I will try and keep you updated how I use all these lovely ingredients as we go along.

Things to Try Thursday, 1st of March *2012

1. Salted Caramel. Chocolate. What else do you really need in life?

2. I’ve never made one, but red cakes/cupcakes certainly have something about them. These sound really interesting: Beetroot and Poppyseed Muffins (they’re gluten and dairy free too btw, in case any one of you is suffering from an allergy to either!)

3. Elegant AND indulgent: Raspberry and Dark Chocolate Cheesecake (everyone likes a good cheesecake? Right?!)

4. Mmmmmmhhhhh. I imagine these to be the most delicate little cupcakes with just this subtle hint of calming chamomile and sweetness of honey.Delicious: Honey Chamomile Cupcakes

SAVOURY

1. Amazing little canapés: Okra Cornmeal Cakes with Chevre and Roasted Tomatoes 

2. Got to love a nice Quesadilla. Especially when it’s filled with sweet potato goodness: Sweet Potato and Black Bean Quesadillas

3. YEAH. Just make them, not much to say, it’s all in the name:Caramelized Mushroom and Onion Biscuit

4. Summer is coming: Gazpacho
